I was raised in a traditional Portuguese household where kale was a staple in our weekly dinners. It wasn't until I was older when it came to my attention that mainstream Americans don't tend to embrace kale the way I have. To this day, my father insist on eating his simple kale soup at least once a week to stay healthy. The nutritional value of kale was engrained in me. I came across the article, "The Secret Life of Kale," today. I think if you take the time to read it you may grow a greater appreciation for the health benefits of kale. The most important component of kale is it's very high amount of vitamin A. Vitamin A is the vitamin of the immune system and is vital for a strong immune system. It also has a healthy omega3 to omega 6 ratio. Maybe we should switch our chicken soup for kale soup when we are feeling under the weather.
